Chef and modern-day hunter-gatherer Mark Andrews from the highly acclaimed Fire & Wild will take you on a one-of-a-kind culinary journey with a sensational 5-course tasting menu.
Mark and his team embrace traditional open-fire cooking techniques which add complexity of flavour and texture to dishes. Guests will enjoy an intimate, chef-table experience as you watch each course being prepared on the wood fired oven, hot smoker and directly over the hot coals and flames of the grill.
With a unique menu designed especially for Burghley using seasonal, foraged and locally sourced ingredients, Mark will share the story of how each dish on the menu is brought to life in this truly immersive dining experience. Dishes focus on native wild plants, fungi, seafood, fish and game with guests able to choose between a standard omnivore menu or an alternative vegetarian menu.
